ZYMAFLORE® RB4

BIO - certyfikat USABIO - certyfikat UEWegański

 

Yeast for fruity red wines ('primeur' style). Terroir selection. Grape varieties: Gamay.

Isolated in Beaujolais.
High production of fermentation aromas and red fruit characters.
Favours rapid MLF initiation.
Strain recommended for:
* Primeur style wines.
* Aromatic and fruity wines, with roundness and length.

 

A grape selected by Sicarex in Beaujolais and verified by the Institut Français de la Vigne et du Vin for the production of primeur style red fruit wines, intense and expressive in the nose, in the mouth and long on the palate.

It is particularly suited to Gamay, giving intense and complex wines with red fruit aromas.

 DOSAGE
- 15 - 30 g/hL (150 - 300 ppm).
In the case of pre-fermentation cold maceration (cold soaking)
(cold soaking), it is recommended to add 5 g/hL (50 ppm) of yeast during the filling of the tank, in order to dominate the autochthonous flora, and then supplement with 15 to 20 g/hL (150 - 200 ppm) at the end of the maceration, before raising the temperature of the must.
